5-Day Family Meal Plan

Day 1: Ground Beef Taco Bowls with Brown Rice and Veggies
Servings: 4
Total Time: 45 to 50 minutes (10 min prep, 35 to 40 min cook)
Equipment Needed: Pot with lid (for rice), large skillet, knife, cutting board, can opener, measuring spoons
Ingredients
- 1 pound lean ground beef (90% or higher)
- 1 cup dry brown rice
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 cup frozen corn
- 1 can (15 ounces) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
Directions
- Wash hands before cooking.
- In a pot, bring 2 cups of water and brown rice to a boil.
- Reduce heat to low, cover, and cook for 35 to 40 minutes until fluffy.
- While rice cooks, heat olive oil in a skillet over medium heat.
- Cook onion until soft, then add ground beef and cook thoroughly.
- Add spices and stir well.
- Add bell pepper, corn, and black beans. Cook until heated through.
- Serve beef mixture over brown rice.

Day 2: Lemon Herb Chicken with Roasted Potatoes and Green Beans

Equipment Needed: Sheet pan, mixing bowl, knife, cutting board, oven, measuring spoons
Ingredients
- 1 pound boneless chicken breasts
- 1 pound baby potatoes, halved
- 1/2 red onion, sliced
- 1 pound green beans
- 2 tablespoons olive oil
- 1 lemon, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Directions
- Preheat oven to 400°F.
- Toss potatoes, onion, and green beans with 1 tablespoon olive oil and seasonings.
- Place chicken on sheet pan with vegetables. Drizzle with remaining olive oil and top chicken with lemon slices.
- Bake for 35 to 40 minutes or until chicken is cooked through.

Day 3: Mediterranean Chickpea Salad

Ingredients
- 1 can (15 ounces) low-sodium chickpeas, drained and rinsed
- 1/2 cup cooked brown rice (from Day 1)
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (from Day 2)
- 1/2 teaspoon dried oregano
Directions
- Wash hands before preparing food.
- In a large bowl, combine chickpeas, rice, cucumber, tomatoes, and onion.
- Add olive oil, lemon juice, and oregano. Stir to combine.
- Chill in the refrigerator for at least 5 minutes before serving.

Ingredients
- 8 ounces whole wheat pasta
- 1 cup cooked chicken (from Day 2)
- 1/2 cup milk
- 1/4 cup shredded cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Directions
- Bring a pot of water to a boil.
- Add pasta and cook for 7 to 8 minutes or until tender. Drain.
- In a pan, heat a small amount of olive oil over medium heat.
- Add milk and spices, then stir in chicken.
- Combine with pasta and top with shredded cheese.

Day 5: Veggie, Bean, and Ground Beef Quesadillas

Total Time: 20 to 25 minutes (10 min prep, 10 to 15 min cook)
Equipment Needed: Skillet, spatula, knife, cutting board, measuring cups
Ingredients
- 4 whole wheat tortillas
- 2 cups cooked ground beef (from Day 1)
- 1/2 cup black beans (from Day 1)
- 1/2 cup cherry tomatoes (from Day 3)
- 1/2 cup shredded cheese (from Day 4)
- 1/2 red onion (from Day 3)
- 1 tablespoon olive oil
Directions
- Heat olive oil in a skillet over medium heat.
- Place tortillas in the skillet and add beef, beans, tomatoes, onion, and cheese on one side.
- Fold tortillas in half and cook until golden brown on both sides and cheese is melted.
- Slice and serve warm.
